Fresh and live commodities, as the name suggests, should be always "fresh".So keeping fresh is crucial to fresh and live commodities. A mechanical freezing system, however advanced it is, can provide only a low temperature, while cannot provide a humid environment. This disadvantage will dry the surface of, dewater or frostbite the fresh and live commodities.
PLarge contacting area and quick freezing
As flake ice is in a flat shape, it has a large contacting area compared to ice of the other types. The larger the contacting area, the more effective the freezing becomes. For example, the minimum area of 1000 Kg flake ice is 1,579 square meters, while ice of same quantity in the other types provides only 395 to 1294 square meters contacting area.
